Mixing Traditions

Mixing Traditions Final Presentation

Jasmine Horowitz and Amedeo Bettauer

Mixing Traditions is a project harmonizing Ashkenazi and Syrian Jewish cuisine, with colorful presentation and delicious flavors. It consists of a small bowl filled with flavorful tabbouleh, a moat of smoky baba ghanoush, and a few crunchy matzah pieces for dipping.

The project is built on low carbon emissions, with the whole dish having only 4000 gCO2e, in comparison, an 8oz steak has 10,000. Jewish cuisine isn't exactly known for being sustainable or meatless, but we change that with an authentic delicious meal that's also good for the planet.
